Happy belated birthday!

A nice, thick 1 kilogram T-Bone for dinner tonight.
Just going to salt and pepper it and give it a nice slow reverse sear and maybe chuck some jacket potatoes and onions in some foil while I'm there. A nice garlic butter to go with. 😋

Thank you! Sounds wonderful, always wanted to try the reverse sear thing. And nothing is bad with garlic butter!
 
Well it was good, more medium well than medium rare but still nice.

Basically a way to cook when you have a really thick cut of steak instead of cooking it in a real hot pan/grill for a few minutes either side because it's so thick you have more control over the outcome.

A reverse sear is when you start off cooking over a low heat, either indirect on a BBQ or in an oven for a longer period of time and just before it's ready when slightly undercooked you then flash it over the flames or in a pan for that last touch.

It's my new favourite way for steak but really needs to be a couple of inches thick for it to be worth doing that way.
 
We got about a foot of snow

I smoked a texas chili on my Traeger

It was a good choice, to do this thing

Today's challenge is to work on my low cooking temps with charcoal.
Have this little brisket to go on shortly.

Also a couple of lovely 21 day aged steaks I'll have to do in the next day or two.

Didn't worry about the heart shaped stuff, I got deluxe mixed nuts and beef jerky for Valentines Day!
