2 dozens of egg rolls for the two of us.
PS: I was hungry and the missus is taking a nap. There is only a dozen left. If she doesn’t wake up soon there may just be half a dozen. 😄

I like to make a bunch, wrap them in plastic wrap and put in ziplock bags and freeze them. But I don't eat a dozen at a time....;)
 
What's the menu for Thanksgiving for y'all? My kid sister and my children are in charge of this Thanksgiving.
So far this is what we got.
2 Fried turkeys
Spiral honey baked ham
Mushroom & oyster dressing
Cornbread dressing
Garlic roasted mashed potato
Mac & cheese
Ginger cranberry sauce
Glazed carrots
Roasted Brussel sprouts with balsamic vinaigrette
Creamed spinach
Redfish sashimi

I was also thinking smoked prime rib but that's on the menu for Christmas - Yes we think that far ahead when it comes to food. It is as natural as repotting in the spring.
There's gonna be leftovers for days! My kids splurge because grandma is coming over for Thanksgiving.
 
The Thanksgiving menu rundown.

Turkey: rubbed with olive oil seasoned with fresh, sage, rosemary; sumac, smoked paprika, chipotle, and orange zest and juniper berries; drizzled with orange juice and sherry in the last hour.
Dressing: store bought, but added chopped portobello mushrooms, sauteed onions and celery, and the giblets, plus fresh thyme and parsley, and a healthy dose of Worcestershire.
Standard green bean casserole, but also green bean casserole stuffed portobellos.
Homemade cranberry sauce; regular recipe on the bag, but another batch spiced with fresh ginger, saffron and juniper berry.
And baked sweet potatoes of course.

Dessert
Eggnog cheesecake; my brother's recipe, so no details.
Bourbon chocolate bites; my sister's recipe, so all I know is I had to leave the kitchen while she cooked off the alcohol in the bourbon.
And if course a couple store bought pies.

It was just the two of us this year, so:
Burritos, smothered in green chili, paired with a 2015 Cabernet Sauvignon from Holy Cross winery in Canon City.

Our burrito filling is elk and beef, shredded with a potato and Pueblo green chilis. Also beans (King City Pinks this time), and cheese, and the burritos get toasted in a frying pan. Our green chili is pork, cooked until it's falling apart, with more Pueblo green chilis. The burrito filling, beans, and green chili each require many hours to cook, but I prepare them in very large batches and freeze 2 cup portions.

Desert was Marie Calendar's key lime pie.
 
We fried 2 17lb turkeys and roasted a 25 lb turkey in split halves and had lunch and dinner Thankgiving.

Garlic roasted mashed potato and other sides
Apple and pumpkin pies
I could hardly walk last night

Home sick with the flu, too sore and tired to do much, so I'm of course watching way too much TV.
Got back around to the Townsends YouTube channel for the first time in forever. Historical American frontier stuff, but their videos that really grab your attention are their cooking ones.
If you enjoy campfire cooking, or maybe even just charcoal BBQing, these are full of great tips and ideas.

Just finished this one.
Maybe it's just me feeling surly, but I really think I could've outdone either of those guys with half the gear.
 
Think I finally found the right base recipe for my holiday snicker doodles. A couple more batches will tell, a little more playing with it, preferably not while I'm also trying to bake potatoes.

Anyone have a recipe for those little fruitcake bites that hardly have any cake to them at all? The ones with just enough stuff to hold the fruit and nuts together, then you slather them with buttercream frosting?
My ex-mother in law has a wonderful recipe, but calling her to talk cooking might not be appreciated.

Why not? I have known in-laws cooking relationships that last well beyond the marriages themselves.

Normally I would agree with you, and I still get along with them pretty well whenever we meet, but my ex isn't known for sharing well, then the kids get to deal with it.

I LOVE cooking and smoking/grilling meats. For Christmas we’re doing a smoked prime rib, so I’ll make sure to post pics of that meal. I got a prime rib a couple months back before the holidays for only 6.50/lb at our local Kroger. Took it home and vacuum sealed it knowing I was gonna cook it for the holidays. I’ve smoked a lot of meats, but this will be my first prime rib.

Christmas menu:
Smoked prime rib w/ garlic herb butter crust (served w/ horseradish sauce)
Garlic mashed potatoes
Seasonal spinach salad w/ apples, pecans, dried cranberries, and an apple cider vinegar dressing
Broccoli cheese casserole
Homemade dinner rolls
Haven’t figured out what dessert yet, but I know my girlfriend will want to make something. Possibly a bourbon pecan pie since we didn’t get to make one for Thanksgiving.

Oh and did I mention I love cooking?

I got a big prime rib roast at Kroger too. Between the sale and the e-coupon, I got it for $3.97/lb!
Since there are only two of us at the house, today I am going to do what my lady prefers. I cut super thin steaks (3/8" thick), seasoned them and flash sear them on a super hot cast iron pan. It will be served with garlic mashed potato. With that big roast, I have enough steaks for 4 days for us.

That’s crazy cheap! I love Kroger for their deals on meats. I buy most of my briskets from them cause they always have them on a great deal.

Kroger started out as a butcher shop in Cincinnati. They never forget their roots. Kroger corporate buyers are experts in meat selection for the common consumers. Their meats are always excellent for the price range they offer. Their meats are in the low price target range and not prime stuff but for us po-folks they are good.
 
Not sure we'll be doing a big family Christmas this year, so I asked my kids for suggestions for dinner.

There's a local grocer in the next town over who occasionally has lamb at exciting prices, and almost all there beef is local. Might have to hit them up, see what they have going.
 
I curse all the new age cooking show. I used to get beef bones, hog head for free. Chicken wing, organ meat, beef tongue, and ox tail were 1/4th the price of hamburger. Now they are all outta sight.

I know! All they've made the cheap stuff into fancy crap, and now I'm stuck paying t-bone prices for heart and tail, or worse.
No one likes liver still, so I guess if that's your thing you're still in good shape.

Yep. I've been to several dinner invitations where failed attempts at braised ox-tail were served. Even at my best attempt at diplomacy, I can only muster "It's OK. If it were me, I probably wouldn't cook it this way." I know that is harsh but somebody gotta tell them the truth. It is easy to overcook it in an instant pot in pressure cooker mode. Falling off the bone is not what we should do. The tendon must be tender but the whole tail cut shape should be preserved.

That and ghastly beef tongue soups and hog head cheese that tasted like something people throw up after a night of drinking. People please! Rendering the jelly from hoghead is easy, seasoning it so it is tasty is a tough endeavour. I myself wouldn't try that. I'll leave it to some grandmas from up in the hills.
