I, personally wouldn’t cook BEFORE jerky.I got a 13 lb chunk of silverside I have just started brining to make corned beef. It's massive and far too much for all of us so my plan is to use some for straight up corned beef and a heap to make jerky.
Just wondering if I'd be better off making the jerky after brining and before cooking or cook it all first?
