The cooking thread

I always forget about this thread when I’m actually cooking interesting things.. 🤣

This was what “da boys” and I did for breakfast..

A thinner quiche....i used potato flakes for the “flour component” so I could bring some to their mother. (Who has Seliac’s (sp?))
Other than that.. nothing too fancy.. marinated the veggies..onions, celery, bell pepper, banana pepper.. for about 30 minutes (room temp) before hitting them in a pan with some sliced (by ME :) ) garlic and making a balsamic reduction to the mid-“par-cooked” onion point... thrown together with my egg/water/potato mix, and thrown in.. using the first four minutes to shred colby jack before sprinkling over top..

Main spice profiles used for the egg mix was greenspice (heavily favoring dill weed and parsley for THIS recipe) a turmeric/paprika PRE-union... aaaaand the other usual candidates. :)

Nothing special, or exciting.. 🤦🏼‍♂️🤦🏽‍♂️

I have to remember to post here with BETTER food. 🤣🤣

Black Angus tenderloin. Sometimes my wife gets it for $10 USD/lb, but that was before Covid broke loose too.
Portuguese muffins? mmm now that sounds tasty too. I'm diabetic and I swear no matter how much I eat
when I get to bed, I'm always hungry. WTH?
Luckily, we bought a couple meat bundles from a local meat processing plant a week before the whole COVID shit hit the fan. Pretty much lasted us up until now. Meat prices have stabilized now, so we could probably get beef tenderloin for $10-$12 a lb. I prefer a strip steak or ribeye. My grandpa and dad were both butchers and taught us fat is flavor! My dad was also diabetic and kept snacks next to his recliner, so I don't think you're alone with always feeling hungry.
 
I'm averaging $10 lb at Joe's Produce excluding Filet Mignon.....and 95% cooked on my George Foreman Grille...No Brag, just the way it is....

My wife hates coconut. Anything that has anything to do with coconut,
but she made me, her 1st coconut creme pie today, 👍👍. Maybe a meringue next time.
Her 1st pudding from scratch, if done in a homemade crust, she could sell these in our restaurant if I were to ever open one.
I also do a Scotch Pancake with toasted coconut pudding and powdered sugar in the mix.
