Yesterday was literally a wash-out, it poured all day. Today was nice and sunny. Normally we would go somewhere and do something, but with nowhere to go, I had plenty of time to smoke some ribs, chicken and sausage. smoker today.jpgchicken today.jpgsausage.jpg

pancakes with maple syrup

SWEET! I have a (we call it scratch recipe rather than a box mix) Scotch pancake recipe of my Dads.
You add a portion of uncooked Toasted Coconut or similar pudding to the recipe and powdered sugar.
Ingredients are left out all night and in mixer, mixed way way past a stir.
They are leavened though, and you can glide a butter knife through the cake no bunching.
Sweet and tender inside and toasted light crisp outside. Just one of my few sweet fixes. M!

I like what's in your kitchen! Sausage, I thought it looked like brats.
Just the three of us, I took a bunch to the guys at work.

That is NOT what pancakes look like around these parts. I've never really wanted to go to France (maybe I judged a guy unfairly in college...), but eating pancakes that look like that would be on the list if I ever did go to France. (I know that says more about me than I'd probably admit to.)
 
Brisket and crawfish eggrolls taste a bit different than traditional ones. The filling is definitely richer and a bit more texture. The taste is delightful and sinful! I ground the fat end of the brisket as filling and put whole crawfish tail meat in as well.

Definitely not grandma's traditional eggrolls but I think she will approve.20200430_183150.jpg
