Survived the winter I think, Rabbits, notsomuch

Last year I spent the season collecting/acquiring tree specimens. I put them in a holding area for the winter, covered the tender ones with straw, soil. As the days have warmed up I have been thinking it will be time to pot them up into grow pots. Lo and Behold, friggin' bunny critters have nibbled down the juiciest portions of seedling/saplings.

Do I pot them up anyway, or leave them alone and see if any green sprouts? I am also working on building a bench to get them up off the ground.

Just looking for ideas thoughts, and thanks in advance
 
Most species will survive some nibbling. If they could not cope most plants would have become extinct way back. The trimming may even be beneficial in producing better bends and branching in your prospective trunks.
It will depend on the species and how far your helpful bunnies have reduced them.
I'd go ahead and pot up but it also won't hurt to defer potting until you see some action and pot them up as they start to grow.
