OK Aaron - here's a path. I like the front you chose. The strong taper suggests a short tree. Southern live oak are great trees and bud back on pretty old wood. You can do all of this with the existing branches save one, which you may have to graft. Here's your chosen front and a quick sketch of how I saw this tree:

As I said - most everything I drew can be built from existing buds save one important branch. That one may have to be grafted. I tried to indicate what to cut, what to keep, and where to graft in this picture:

As this is a recently collected tree, don't do anything this season - let it grow. next season start reducing the extra trunks, but let the future apex grow strong. You might want to leave one or two shoots long on the branches to be removed so that you can use them for grafting - just wire them into position for grafting while they're still pliable.

Anyway - that's one plan. There are some other directions you can go as well. But drawing it out like this is a really good way to start planning for the future and making decisions about what to keep and remove.

Amazing how a sketch to one, can be a jaw dropping realization to another! I love what you came up with and it is absolutely doable with the branching that the tree has already started giving me. Thank you! This is the future for this tree now!

Sometimes trees like this one suffer from sap withdrawal.
 
Did the thread graft last night with help of my buddy nate (it was both of our first time grafting). I would've liked if the branch was a bit longer but it was still enough.
