Getting first bonsai/yamadori and general questions

So I've been interested in bonsai for a while and got a seed kit as a gift.

As I imagine you all know, it's slow and inconsistent way. As such I've decided to obtain a grown tree.
I have a family member with a farm house and there's a few species there that might work so I'm looking for advice.

I know I might find
- olive trees
- pomegranate trees
- laurels (which supposedly are fussy)
Both of these are fine in my climate (Portugal). My plan is to find a nice looking tree, get a ~10l or so vase, fill it with pumice or whatever (what should I be looking for at the farm shop?) and pot it.
Then from what I hear I just have to wait until next year and I can start training wiring and pruning.

On another note, there's also this big rosemary bush that I was curious about. I don't want to remove the entire bush so what would be the best? Finding a good section and air layering?
Would it use the same soils?

I also am growing a lot of peppers and when growing season is over I'll try some bonchi.
I think I've read on them being fine on normal potting soil? And being made after pruning a grown pepper plant and its rootball, but should I be worrying about wiring mine already?

Next month I'll be checking out a local bonsai club so hopefully I'll have some people to learn from, anything to keep in mind?

Olive and pomegranate are great subjects and easy to collect.
