Best species for formal upright "pines" for coastal Southern California?

I would like to create some formal upright "pines" that look somewhat like the ones in the links below.

What species is best to do something like this in coastal Southern California (zone 9b or 10a)?

I think some spruce varieties would be ideal in colder climates, but maybe not for my area. I do have a bald cypress that grows well here and would probably be perfect, but looking for other species besides that.

I would like to simulate old-looking pine/spruce trees.
