Nice tree, Cedars are fun as they can develop nice and fast. I fertilize my trees in training pots with regular liquid chemical fertilizer. I fertilize my stuff in pots with organic only. For pruning I stop sometime around August 1 but I would stop major pruning work sometime around July 4th.
Overtime you might choose to cut out the straight section near the top.

You start to get to know these trees and the tight growth of old age. Mostly I can tell by counting the tight rings on a cut off branch. Otherwise I just guess. 150 years give or take 150 years haha!
