Does anyone know what determines the young bark color on some Japanese maple?

I have two Katsura that both leaf out with the orange/yellow typical leaves. Ordered a the same time from Brent at Evergreen Garden works. One the new bark is primarily green the other is more red.

The local nursery has a maple I was told was a shin deshojo (it was actually labeled Seigen but our own @Canada Bonsai confirmed suspicions it was not Seigen). The one at the nursery has green young bark others I have seen are more red.

Bark color is a product of genetics and health. I would guess one or more of the trees you purchased was mislabelled, and it is (or they are) not the cultivar you intended to buy.

I own the Katsura and I trust Brent at Evergreen Garden works. Could they have gotten mixed up. maybe?
