Is it to early to collect privet now. I have literally a never ending supply of mature, very old privet of all shapes and sizes...I'm interesred in keeping privet.

Literally never ending? You should start digging in late winter / early spring and figure out how to ship effectively. You'll have a never ending revenue stream. Privets are tough!

I love my privets that I picked up from a trash pile. They're so easy and fun to work with I feel like I'm cheating.
 
Privets are great! I've got a big Texas privet tree that seeds all over my yard and I've made some nice bonsai from the offspring.
The leaves reduce very well with ramification which happens very quickly. They can be hedged or defoliated multiple times a year. I've dug them up all year around and never killed one.
