Nice explanation! I would think that the Stainless tools would be less hassle to deal with. Especially in a hobby in which water and moisture is involved. I'd personally be worried about constantly drying and cleaning and at the end of the day oiling all of the Carbon tools to protect from rust. But I have a feeling I'm a bit more "messy" then most. The fear of rust comes from my collecting of Japanese Nihonto.... Once you get rust on a sword blade your in for a lengthy and expensive clean up.

It's hard to say where the truth is ... Stainless steel tools should be rust resistant, but... you know it's all SS or only a top SS layer? In the second case after some minor damage or first sharpening...

There are no rust proof steels. All of them can corrode if you don't take care of it well. Stainless literally means "stains less". The stainless quality is from the chromium used which will have an even distribution throughout the steel. So not exclusive to the surface. Some companies will put a chromium coating on their tools though to make them extremely corrosion resistant.
