Nice explanation! I would think that the Stainless tools would be less hassle to deal with. Especially in a hobby in which water and moisture is involved. I'd personally be worried about constantly drying and cleaning and at the end of the day oiling all of the Carbon tools to protect from rust. But I have a feeling I'm a bit more "messy" then most. The fear of rust comes from my collecting of Japanese Nihonto.... Once you get rust on a sword blade your in for a lengthy and expensive clean up.
