Hey, I'm very new to bonsai and have this Japanese maple from a family's house that's a different cultivar from what I have at home, and was considering air layering off of it come spring. I understand exact cultivar identification is impossible, but I was wondering about this tree's viability for bonsai over other cultivars.

If you see branches on the main tree with a reduced leaf size compared to the rest, they probably reduce pretty easily. That means they're probably suited for bonsai.

It's difficult to predict any plants behavior in a pot, but since there are a gazillian maple varieties, best course of action is to just try it.
