How to acclimate trees to my State

I did not now any of that. But that is good to know, thank you.. Why would one be red and the other be green if they are both seed grown though?

Because of the wonderful world of genetics. Some plants come true from seed and you can plant them out all day long and just keep getting more of the same. Some plants do not come true. To keep having that plant you have to keep cutting and grafting, or layering, or something that is cloning the exact genetic tissue. The "Bloodgood" cultivar can and will set seed but it will be of mixed genetics and therefore can look like any number of similar Japanese maples. Just think of Gregor Mendel and the bean plants from science class (I had to google the name :(). Or look at human genetics. These plants can be perfectly good plants but you are not guaranteed the same look and vigor of the named cultivar.
