Does anyone have any tips for my Blue Jacaranda bonsai?

Welcome. Mostly you need let your tree grow. Outside if possible.

Let us know where you live, generally. You'll get better advice if we know generally where you live and your climate zone.

So disclaimer, these are extremely hard to make bonsai of...i'm on my second attempt after being warned repeatedly...so take it or leave it

So these are sub tropical trees, they like a lot of sun and do not tolerate frost or cold temperatures very well so avoid leaving them outside when it looks likely you will have any of this weather.
They do drop their leaves though if the temperatures go under 5C/41F, but they should recover as long as you don't allow the temperature to drop further.

Regarding where to overwinter them, i sadly cannot help, as i have no experience with that, i fortunately live in a climate close enough to their native not to require overwintering plans
