I'm using 0.8mm iron wire on my seedlings, because it rusts away and not because it also cuts bark like a piece of cake.
1mm alu wire is fine for seedlings. But make sure to use extra long pieces so that you can use your something for leverage, you don't want to put pressure on those little stems because then they'll die.
As for thickness, I prefer fatter wire overthinn slimmer wire, because of the bark cutting and the ease of removing fatter wire once it's grown in a little.
