Why would you begin to use the appropriate material and then prevent it from working properly by covering it with dirt? Did you read the resource material on soil components? I think your last statement answers the question.

I am planning on buying this soil. How does it look? Does gardening soil work on top; like WesB said?

I didn't say anything about dirt, gardening soil or anything else used on top. I said "moss" . Some moss is great, It is all explained in that video. In the video what they are removing from the pot isn't "dirt" . It is accumulated organic material from fertilizing that has broken down over the years, they replace that organic material with a bonsai soil because it is causing the bonsai soil to stop draining well.
