When to repot my pomegranate

I have a Pomegranate plant in a little one gallon plastic pot that I purchased it in earlier this year. It has regular potting soil in it. It is still pretty small and more like a small bush than a tree. My question is, when do I move it from its regular potting soil to a "bonsai soil mixture" in a new pot?

I prefer spring. But my pommegrenate is basically bulletproof, so I don't think it really matter as long as it gets enough water afterwards.
 
I have been told by many experienced people that my pomegranate will not develop a thick trunk unless I grow it in the ground. OP doesn't indicate either location or growing Zone, so I don't know if you can ground grow your pomegranate year round--I cannot here in 7B.

I grew mine in my garden in 2022, but then put it into a large tray (24"×18×6) for the winter; so I did that repot in October and put it into my 55° greenhouse. I'm leaving it in that tray outdoors for this summer and plan to pot it this October.
 
I have heard that pomegranate wont thicken unless in the ground but it is not an option for me unfortunately. I guess I will work with what I have
