What would you do to this forgotten gem

Personally I'd wait till next spring before doing much, when theres juices to help seal wounds and the heat won't bother a repot.
Could use that time to sort a pot or a box planter.

I would have thought there's juices now lol, new Zealand, the rootstock is still growing
 
Almost impossible to pick the best option when we can only see 1 angle in a 2D picture as there's no way to see depth or what other branches are at the back but here's one possibility from the side shown.

Chopping those 2 thick, straight branches will give your trunk some taper and some bends.
Not clear how healthy and happy the tree is now but summer can be a good time to chop JM provided you can give it good water and care. The tree can get on with healing the cuts right away. If I was to chop like that now I would also chop any other tall branches to avoid taller branches taking over.
