What is the best time to make a big cut on a olive?

Hello everyone, I currently have an overgrown olive and would like to cut it back down to the trunk. My goal would be to make a shohin bonsai. What would be the ideal time to do this?

Best time to hard prune olive is when it is strong and healthy.
Time of year doesn't seem to matter much. Response will be quicker after spring/ summer pruning. New shoots may take a few months after autumn/winter pruning but the response will be just as strong when it does come.
