There are a few exceptional books I'm familiar with that fit into this category:

Bonsai Today Master Series: Pines
Bonsai Today Master Series: Junipers
Bonsai with Japanese Maples by Peter Adams
The Art of Bonsai Design by Colin Lewis (Junipers, Pines, Larches, & Elms)

Are there any other bonsai books out there that focus on one (or just a few) particular species?
 
There is John Naka's "Bonsai Techniques for Satsuki".

Nick Lenz's "Bonsai from the Wild" is probably a bit broader than you are thinking of, but does focus on North American natives.
 
Yeah, Nick's book is already on my list. =)
