I just bought a very pot bound small leaf Fukien tea in 100% organic. Do I have to wait until next spring to repot? It rains a lot here and I don’t want it too wet or too root bound. Thanks!

No. Fukien teas are tropical plants. Usually you would want to go with late spring, early summer - so that the tree would have time to recover before the heat and intensity of the warm weather. But I have found that as long as you give them sun protection and plenty of humidity, they do well, even this late in the season.
Note - Fukien teas are notoriously finicky about their roots. I would consider working only half of the rootball, waiting a year, and do the other half next year. Once the tree is moved into bonsai soil, it will be easier to repot in the future.
