Pittosporum Tobira chopping

I saw this Pittosporum Tobira aka cheesewood at a nearby nursery . I know that they are not among the first choices for turning into a bonsai, but I am thinking of giving it a try.

Does anyone know whether Pittosporum backbuds from oldwood after chopping? Should I also worry about dieback when pruning?
