Help with Mock Orange Plan

I need some help to get my thought process going on this Mock Orange. It grows well in my climate and I see there is a lot of potential. However, I have a few questions but not sure if I am asking the correct questions if that sound right? The questions are general...

1. Is a three branching structure a good plan for a bonsai? We do see this in nature but usually from a longer and tapered trunk.
2. What should I be thinking about when you have this scenario when there is a three branch structure and you want to cut two branches? I currently think that the thickness of the trunk will be too abrupt in this case? Or... don't beat myself up about three branch structure?
3. If I do chop other two branches and leave one can I carve to create a better taper?
4. General concern of not sufficient back budding with this species? Should I be?
5. Most general question: Does anyone have a good approach on keeping or deleting three branch structures?

You can taper it as such.

In the traffic signal order.

If you wanted to keep all 3 I'd let the green grow really strong to get it the thickest, and large enough to always remain the thickest, since you want them different sizes....
Then chop it around the red height and use that for a backbudding gauge too.
If it don't. Plan B.
