Hackberry / Celtis Defoliation?

I have a refine celtis which I bought from a retired bonsai artist.
For anyone who has a celtis in refinement stage.
Do you guys do Partial outer canopy defoliation? or just cutback?

the celtis in South Africa (sinensis and africana) are almost bullet proof... they respond awesomely to defoliation...
don't know about you going into winter now?

Thanks! They are turning yellow and leaves are falling
Just want to understand how to maintain them in the growing season
