California olive pruning

I have a few young olives - between 3 and 5 years old that I propagated from cuttings. They seem to be growing well here, in Victoria, BC. Kept outside all year long. They appear to already start developing new buds. Last prune was done about one year ago. The question: when is time to prune them? The branches are already 4" to 5" long with many leaves on each one. I'd like to reduce branches to first, or second nodes and keep my trees rather small. Thank you for experienced answers.
 
Good job on your trees. Likely your ’California’ olive is a cultivar from Spain or another country in the Med.

It would be really great to see some photos so folks here can tell what they are advising about.
