Black olive tree (Bucida Buceras) opinions on next step

🙋‍♂️ hi fellow bonsai addicts, I’m quite new to this hobby and this community has been very great!
I acquired a bucida buceris tree last year and have only slip potted it into its current pot. Tradition says the trunk base should be 1/6 of the height. taking this information in I’m stuck on either cutting this down (red line) to set the height(mame?) or letting the canopy grow and thicken the trunk to meet 1/6 of the current height. I feel like the second method would be a longer project but look great while the first method would be an immediate reward.

You will want taper into the canopy, if you chop it there your canopy will be/grow higher than mame size.
I think you can/should chop it lower (maybe air layer that top out for a second tree).
 
All depends on your personal preference. Do you have to bring those inside in Texas? I allowed a little sapling to get an escape root for a year and the trunk got much thinker. I made a progression video if you care to check it out. Not much information on bucida in general available out there, especially the buceras variety.
 
This is way too early in the career of this tree to be sizing to a pot. It will essentially stop growing in a small pot. Choose a pot to match the tree when it gets to be the size you want to keep it, and between now and then in a bigger pot with room to grow and repot every 3rd year or so.
